Here’s a simple Roman recipe for Libum (pancake, bun), a flat cheese bread flavored with a bay leaf.
Libum (A flat cheese bread)
Mix 1 cup whole wheat flour with 8 oz cheddar cheese (grated or shredded) and 1 egg. Work the dough by squeezing until smooth (it will start out crumbly). Add a little olive oil if needed to get a smooth dough. Let dough stand a few minutes.
Flatten to 1/4 inch thick with a rolling pin.
Cut out dough circles. Place each circle on a fresh bay leaf on a greased cookie pan.
Cover with foil to keep moist and bake at 400 F for 35-40 minutes.
